There are few foods I love more than guacamole. I like it simple and classic, best served with a margarita, and I have it down to a science. So. You can imagine when I learned about adding peas to my guacamole, I was highly skeptical. So skeptical in fact that I actually had to apologize to the chef. Because you see, there are things you don’t mess with. For instance, you don’t mess with moms and their kids, bears and their cubs, or me and my guacamole. Enough said?
But since I’m bending rules and this one is reaaallly good, of course I want to share it with you. Because what could be better than guacamole on a hot summer day? Brighter, healthier, lighter guacamole on a hot summer day! That tastes just as good, if not better, of course. Go ahead, have twice as much.
1 cup frozen peas
1/2 lime, squeezed
*add minced garlic, tomato or cilantro if desired
In a blender or food processor, process the peas until smooth. (You can mash them with a fork too). In a bowl or on a cutting board, mash the avocado with a fork to the texture you like. I like mine pretty smashed. Add the fresh squeezed lime juice, salt and pepper and peas. Mix and serve!
