Power Spinach Salad

One of my big goals this year is to broaden my clean eating regimen to include more and different types of foods. I tend to be a bit of a rut person and am very happy eating the same things day after day. But I know my body needs nutrients from other sources, and I know I’m not getting enough protein. So the other night when my husband asked what’s for dinner? I said with all the gusto I could manage: I’m making a big, yummy salad! His nose turned up a bit and he quickly shot back: I’m not really craving a salad for dinner. Hahaha! I laughed. Does anyone?

“I’m craving a salad!” “Just greens please.” Said no one, perhaps ever…! Nevertheless, this power packed salad is about as good as it gets and a new go-to. It’s simple, it’s got great flavor and tons of protein, and I call it a win. It contains cottage cheese, which I always thought was gross but never really tried it. Now I love it. Also — it’s amazing for you. AND it completely eliminates the need for dressing.

Here are a few little known facts about cottage cheese: It’s a great source of protein. Just one cup will give you 28 grams of protein. That’s 56% of your daily intake! Protein is extremely important for muscle growth and repair, and few of us actually get what we need. Cottage cheese is very low in carbohydrates so it doesn’t cause spikes in blood sugar. It’s also an excellent source of calcium, and has been credited with increasing metabolism, promoting weight loss, lowering cholesterol, and reducing risk of cancer. Sign me up.

For this yummy salad, you will need:

1/2 cup prepared farro (I prep mine every weekend and have it in the refrigerator). It’s an ancient grain and I use the organic one from Bob’s Red Mill.

Spinach and spring greens

1 cup cottage cheese

1/4 cup drained and rinsed garbanzo beans (chick peas)

1-2 hard boiled eggs

1 roma tomato

Place your greens on the plate and add each ingredient layer on top. Sprinkle with sea salt and fresh pepper and voila! A super-power packed protein salad that is good AND good for you. I hope you love it!

p.s. I’ve taken up drinking Kombucha this year as well and I especially like to serve mine in a champagne glass with my lunch and dinner. It’s really good for your gut and it feels fancy. Who doesn’t love that?!
