Pumpkin Pancakes

Mmmmmm….it’s a Saturday morning and nothing sounds sweeter than a homemade lazy morning pumpkin pancake breakfast. We know we have to eat well to live well but sometimes, let’s just face it, an indulgence is okay. I’m all about moderation. And sometimes you just need to enjoy the season with something deliciously, sinfully good.

Okay. Here’s what we’re cooking up in our home this morning: delicious fall pumpkin pancakes (and you can bet we’ll surely be adding a large side of bacon!) I don’t know about your house, but bacon is fought over fiercely in our home! As the only girl in a house of 4 boys i’ve got to be quick to set a piece aside or it’s gone!

I found the recipe for these delicious pumpkin pancakes {here}!

Here’s what you need:

  • 1 1/4 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon ground cloves
  • 1 cup milk
  • 6 tablespoons pumpkin puree
  • 2 tablespoons butter, melted
  • 1 egg

Directions:

  1. Stir together the flour, sugar, baking powder, cinnamon, ginger, salt, nutmeg and cloves in a medium bowl.
  2. Whisk together the milk, pumpkin, butter and egg in a separate bowl. Fold this mixture into the dry ingredients.
  3. Melt butter in a skillet over medium heat.
  4. Pour 1/4 cup batter for each pancake and cook approximately 3 minutes per side.
  5. Serve with butter and maple syrup.

Mmmmmmm, mmmmm, good. Don’t you love this time of year?
